No Bake Pumpkin Protein Bar

No Bake Pumpkin Protein Bar


  • 1/2 cup butter, softened
  • 1 cup oats
  • 3 Tbsp. chia seeds
  • 3 Tbsp. pumpkin seeds
  • 4 Tbsp. flax meal
  • 2 Tbsp. maple syrup
  • ¼ cup pumpkin puree
  • ½ cup vanilla protein powder (I used 2 packets of Copare Vanilla Shake mix)
  • 1 Tbsp. pumpkin pie spice
  • ½ cup almond butter
  • 1 tsp. vanilla extract
  • 1 cup Lily’s milk chocolate chips, divided
  • 2 Tbsp. unsweetened almond milk
  • Optional: ¼ cup Truvia or Swerve brown sugar

Place oats, chia seeds, pumpkin seeds, flax meal and optional brown sugar substitute in a food processor. Process until combined.

Transfer dry mix into a large mixing bowl.

Add pumpkin puree, almond butter, maple syrup, vanilla extract and pumpkin pie spice.

Stir until everything is combined. Mixture will be very sticky.

Stir in ¼ cup of Lily’s milk chocolate chips.

Line an 8 X 8 inch square pan with parchment paper.

Press the mixture using the back of a spoon or spatula until the pan is covered. Make the batter level and freeze.

In a small bowl, combine the unsweetened almond milk and the remaining ¾ cup of Lily’s milk chocolate chips. Microwave for approximately 45 seconds. Stir until smooth.

Take the bars out of the freezer. Pour the melted chocolate on top of the pumpkin bars and use the back of a spatula to smooth. Top the entire pan with  chocolate.

Freeze for 2-3 hours. Cut into 10 bars.
