Asparagus and Mushroom Medley

  • 1 cup Asparagus, chopped
  • ¾ cup Mushrooms, sliced
  • ¼ cup Red onion
  • 1 sprigs Fresh rosemary, minced
  • 1 Tbsp. Extra virgin olive oil
  • 1 Tbsp. Lemon Juice
  • Pinch Sea salt and pepper


  1. Preheat oven to 450*
  2. In A large bowl, combine all vegetables, drizzle with olive oil, lemon juice, sea salt and pepper.
  3. Spread, into a single layer onto cookie sheet.
  4. Roast until asparagus is tender, about 15-20 minutes.
