Healthier Holiday Eggnog
INGREDIENTS
2 oz. Seedlip, #94 Spice, https://www.seedlipdrinks.com/en-us/
2 Eggs, separated
8 oz Unsweetened Almond Milk
1/3 cup Half and Half
1/2 cup of Stevia
1 Vanilla Bean (scraped) or 1 tsp Vanilla Extract
¼ tsp Ground Nutmeg, additional to grate on top
1 Cinnamon Stick

INSTRUCTIONS
Add the unsweetened almond milk, half and half, vanilla bean, and nutmeg to a saucepan.
Bring mixture to a boil, then remove from heat, place a lid on top and let steep for 10 minutes.
While waiting, separate the egg yolks and reserve the whites in a container. In a medium size bowl beat the 2 egg yolks with ¼ cup of Stevia until pale and thickened (about 3 minutes).
Gradually whisk the egg mixture into the milk mixture.
Add the Seeplip. #94.
Cover and store for a minimum of 2 hours or overnight.
When ready to serve, beat the reserved egg whites until stiff peaks form. Fold the whites into the egg nog base.
Remember to remove the cinnamon stick. Garnish with a bit of fresh ground nutmeg.
Serve in fun, festive glasses!
