Mason Jar Greek Salad with Chicken

 INGREDIENTS

  • 4 Cups Romaine Lettuce, Chopped

  • 1 Cup Grape Tomatoes, Halved

  • 1/2 Small Red Onion, Diced

  • 1 Cup Seedless Cucumber,  Peeled and Diced

  • 1/2 Large Red Bell Pepper, Diced

  • 1/2 Large Yellow Bell Pepper, Diced

  • 12 Pitted Kalamata Olives, Halved

  • 4 Tbsp. Sunflower Seeds

  • 4 Ounces Feta, Crumbled

  • 12 oz. Rotisserie Chicken Breast, Cubed or Shredded

Classic Greek Dressing

  • 1/2 Cup Extra Virgin Olive Oil

  • 4 Tbsp. Red Wine Vinagrette

  • 1 Tbsp. Fresh-Squeezed Lemon Juice

  • 1/2 Tsp Dijon Mustard

  • 1 Tsp Dried Oregano

  • 1 Large Garlic Clove, Minced

  • Salt/Pepper To Taste

 DIRECTIONS

1. Wash and chop all veggies in the suggested sizes listed above. Drain and rinse the olives.

2. Dice or shred the rotisserie chicken. It is ok to use a combination of light and dark meat. Set aside.

3. Whisk together the Classic Greek Salad Dressing in a small bowl.

4. Layer the ingredients in this order, from the bottom up.  Dressing (2 Tbsp.), tomatoes, cucumbers, red onion, peppers (red/yellow), chicken, sunflower seeds, feta, olives, and romaine. Do not mix together.

5. When ready to serve, give the jar a few really big shakes and pour out onto a plate or large salad bowl.

Serves 4
(You will have about 1/2 of the salad dressing leftover.)
