Spring Salad with Lemon & Cilantro Dressing
INGREDIENTS
Salad
- 4-6 cups of mixed lettuce of choice
- 1 cup asparagus tips, chopped in 1-inch pieces
- 1 medium cucumber, cut into disks
- 2 watermelon radishes, sliced and quartered
- 1 avocado, sliced
- Salt/Pepper to taste
Dressing
- 1/2 cup extra virgin olive oil
- 1/4 white wine vinagar
- 2-3 cloves of garlic, chopped
- 1/2 shallot, diced
- large handful of fresh cilantro
- salt/pepper to taste
- 1/4 cup lemon juice
- 1 Tbsp. Stevia
INSTRUCTIONS
This recipe is super simple!
- In a large bowl, combine all the salad ingredients.
- Put all of the ingredients for the salad dressing in a blender or food processor. Process until smooth.
- Pour dressing over salad and toss until fully incorporated.
