Spring Salad with Lemon & Cilantro Dressing

INGREDIENTS

Salad

  • 4-6 cups of mixed lettuce of choice
  • 1 cup asparagus tips, chopped in 1-inch pieces
  • 1 medium cucumber, cut into disks
  • 2 watermelon radishes, sliced and quartered
  • 1 avocado, sliced
  • Salt/Pepper to taste

Dressing

  • 1/2 cup extra virgin olive oil
  • 1/4 white wine vinagar
  • 2-3 cloves of garlic, chopped
  • 1/2 shallot, diced
  • large handful of fresh cilantro
  • salt/pepper to taste
  • 1/4 cup lemon juice
  • 1 Tbsp. Stevia

INSTRUCTIONS

This recipe is super simple!

  • In a large bowl, combine all the salad ingredients.
  • Put all of the ingredients for the salad dressing in a blender or food processor. Process until smooth.
  • Pour dressing over salad and toss until fully incorporated.
