Thai Cucumber Avocado Soup
Ingredients
- 3 English cucumbers, peeled
- 3 ripe avocados, peeled and pitted
- 2-3 limes
- 2-3 cloves of garlic
- 1 cup of cilantro, chopped
- 1 container of plain Greek yogurt, 3/4 cup
- 1 heaping Tbsp. of green curry paste
- 2 pinches of cayanne pepper
- 1/2 cup of water
- Sea Salt and black pepper, to taste

Instructions
- Combine all ingredients into a food processor or blender and blend until smooth.
- Refridgerate until chilled.
- Soup will thicken as it chills, so you may need to add a little water.
- Top with a protein for a complete meal! A bit of shopped shrimp or crab meat would go well.
- Garnish with lime wedges and cilantro.
- Served cold.
