Thai Cucumber Avocado Soup


  • 3 English cucumbers, peeled
  • 3 ripe avocados, peeled and pitted
  • 2-3 limes
  • 2-3 cloves of garlic
  • 1 cup of cilantro, chopped
  • 1 container of plain Greek yogurt, 3/4 cup
  • 1 heaping Tbsp. of green curry paste
  • 2 pinches of cayanne pepper
  • 1/2 cup of water
  • Sea Salt and black pepper, to taste

  • Combine all ingredients into a food processor or blender and blend until smooth.
  • Refridgerate until chilled.
  • Soup will thicken as it chills, so you may need to add a little water.
  • Top with a protein for a complete meal! A bit of shopped shrimp or crab meat would go well.
  • Garnish with lime wedges and cilantro.
  • Served cold.
