Quick Ceviche
Ingredients
- ½ medium size cucumber – diced
- ½ red onion – diced
- 1 medium size tomato – diced
- ½ cup of cilantro – finely chopped
- 1 medium size avocado – cubed
- 2 medium limes, enough to yield 2 Tbsp
- 1 Tsp of salt & pepper
- 1lb cooked shrimp, chopped and tails removed
- For heat: ½ diced jalapeno
Directions
Dice cucumber, tomato, and red onion then add to a medium size mixing bowl.
Finely chop cilantro, and add to bowl.
Cut avocado in half, remove pit and slice into cubes. Using a spoon, scoop out avocado from peel and add to other ingredients.
Slice both limes in half and squeeze juice over ingredients.
Add shrimp, sprinkle with salt and pepper.
Using tongs or a cooking spoon, gently mix all ingredients. Enjoy!
Optional: For additional spice, cut a jalapeno pepper in half, remove seeds, and add to mix.
