Crockpot Tuscan Chicken

Serves: 8


  • 3 lbs boneless chicken breast
  • 6 cloves garlic pressed
  • 1 tsp salt
  • ½ tsp black pepper
  • 14 oz can artichoke hearts, drained and quartered
  • 8 oz jar sun dried tomatoes packed in oil with herbs
  • 8 oz baby spinach
  • 1 onion, diced


  1. Place chicken in crockpot and season with salt,
    pepper, and garlic
  2. Top with sun dried tomatoes, artichoke hearts and
  3. Cook on high for 2.5-3 hours, or low 3.5-4 hours.
  4. Once chicken is done, remove lid, pour spinach
    on top, replace lid and let sit 5-10 until it’s wilted.
  5. Serve whole or shredded.
